Vermont Inspired Steel Cut Oatmeal - Warm and comforting

Each year my family and I celebrate Thanksgiving in Stowe, Vermont. We take long hikes, enjoy some good food and pray for snow. One of our favorite harvest breakfasts in Stowe includes steel cut oatmeal. Loaded with fiber (key in helping your body to eliminate gunk and toxins), this detox friendly breakfast is simple and delicious.

Vermont Inspired Steel Cut Oatmeal

Serving Size: 2 (~400 calories, 12g protein per serving)

Ingredients

1 cup steel cut oatmeal (I like Bob’s Red Mill brand)

3 cups water (or milk if you prefer)

2 tablespoons raisins

1 tablespoon maple syrup

1/2 cup almond milk (I like the Blue Diamond brand, Original flavor)

sprinkle of nutmeg, cinnamon

Directions

Place water (or milk) along with the steel cut oats in a pot. Bring water to a boil and then let simmer for ~5 minutes until the oatmeal is slightly soft or al dente.

Serve in two bowls and top with raisins, a sprinkle of nutmeg and cinnamon, and a splash of maple syrup and almond milk. Enjoy while hot! So good!
